Chicken, chicken everywhere!
Today I canned roughly 50 pounds of chicken breast. What a lot of work but not quite as much as I thought it would be...though I have a shoulder really complaining right now! This was the first time I did two layers in the big canner. Up until today I didn't even like that canner. But today it redeemed itself. So 50 pounds nets 16 pints and 14 quarts of chicken. I gave about 10 pounds away and used two breasts for our dinner tonight and then froze the rest.
Dinner tonight was Hobo style. Chicken Pizza cooked in a foil pouch. I took the tenderized chicken breasts and covered them with pizza sauce, pepperoni, Canadian bacon, onions and mozzarella cheese. Folded up the foil and baked them for almost 45 minutes at 375*. It was a huge hit. But there were a couple problems. There was a lot of liquid I had to drain out of each pouch. And the cheese basically disappeared. So..next time I will know to drain the pouches before taking them out of the pan and I will add the cheese before serving. I will also add pineapple...so yummy!
Since I have the canners out I decided to take care of three salmon I nearly forgot about in the chest freezer. It has been 11 months so I am hoping they will still be good. After that I am going to can about 200 sausage links. I think then I will put the canners away until my beans come on in the summer. We will see.
I just had to throw this picture in. In 10 years he may be very upset with me though.....Most Wednesday's Liam has a play date with twin girls who are six months younger than him. This week the hair accessories were within easy reach and when he was done this was the result. Actually, I could really use this photo....and a few others...to my advantage in the coming years....blackmail!
